bananas foster
(rio hondo 2002)
4 tablespoons butter
4 tablespoons brown sugar
2 bananas, peeled and sliced lengthwise
1 tablespoon banana liqueur
1 tablespoon dark rum
3 ounces cognac
2 cups vanilla ice cream
Melt butter in a skillet. Add brown sugar, banana liqueur, and dark rum. Stir until sugar is melted. Add bananas, and pierce bananas with a fork. Sautee till the bananas turn soft and pillowy and the sauce begins to caramelize.
Add cognac and flame. Shake pan and baste bananas until flames die out.
Serve immediately over ice cream.
